The egg taste in this vegan sandwich comes from the Indian black salt - kala namak. The kala namak makes it taste and smell just like eggs, mainly due to its high sulfur content. If you are a vegan who loves the taste of eggs or wants to quit eggs for ethical or health reasons, use this salt in your vegan recipes and you will never miss the egg taste. Kala namak can be purchased in most Indian markets, and possibly in some Asian markets at much lower price and less packaging than online (Amazon affiliate Link).

HOW MUCH KALA NAMAK SALT TO ADD, SO IT TASTES JUST LIKE AN EGG?
Kala namak can be used just like you use regular salt. In this recipe I suggest to add 1/2 tsp of kala namak salt for this recipe because for me it was a good amount to give it the egg flavor, but my husband said he like a little more kala namak salt for more eggy taste, so feel free to adjust the amount to your taste preference.

Vegan Avocado Egg Sandwich - Tastes Just Like Real Egg Sandwich without Eggs
Preparation time

INGREDIENTS

For 3 Batch(es)

Vegan Recipe

  • 4 oz or 1/2 cup - Firm or extra firm tofu, cubed or mushed
  • 1 - Avocado
  • 1 tsp - Lemon juice (optional to prevent avocado from browning, if you going to store your Sandwiches)
  • 0.5 tsp - Indian black salt kala namak (very important to have this salt, since it taste like an egg)
  • A few - Scallions and/or greens of your choice, chopped (optional)
  • 4 slices - Bread

DIRECTIONS

  1. Mix the cubed or mashed tofu, avocado, kala namak salt, lemon juice*, greens (scallions or any other greens/herbs of your choice), in a bowl. 
    *If you are going to eat this right away, then lemon juice is not needed since it is suggested simply to prevent the avocado from browning.
  2. Spread mixture on a slice of bread.
