TASTE & TEXTURE - This Vegan Chocolate smoothie recipe is our family's favorite, and it is 'spoiled teen' approved! It is not very easy to feed healthy and whole foods to my spoiled teenage son, so I created this recipe since it tastes delicious and has a creamy and fluffy texture. The Flax seeds makes it creamy, and chia seeds and avocado makes it thick, fluffy and light. Lecithin makes in this recipe is optional, but it creates a more creamy and almost dairy-like taste. See more information bellow in the "recipe notes" how to buy a Natural Lecithin without any solvents, such as acetone, ethanol or hexane.

NUTRITION - I created this smoothie purposefully to be very high (almost 1000% RDA for adult female) in Omega-3 fatty acids, since my son usually does not eat food high in Omega-3s. Most Americans are deficient in Omega-3s, even those who chose to eat fish. Humans do not need to imprison, manipulate and murder fish and deplete our oceans to get Omega-3. Walnuts, flax seeds, chia seeds, hemp seeds are all high in Omega-3s, and you can have undamaged Omega-3 fats from nut/seeds, while fish is usually cooked, which is damages Omega-3s (and all other mono- and poly-unsaturated fatty acids). Most of the fish oil supplements sold on the market are actually bad (rancid). So if you prefer to get Omega-3 from a supplement and chose not to harm and kill fish, it is better to buy vegan DHA (made from algae) (Amazon affiliate link) than from fish. This vegan chocolate smoothie also has about 60% Protein, 70% selenium, 40% calcium. I use https://cronometer.com to evaluate nutrition of the food, which uses the data from USDA database.

FAT FOR WEIGHT LOSS? - Contrary to a popular, yet unscientific, belief that only low-fat diets help you to lose weight, scientific studies actually show that adding nuts and seeds (high in fat) into your diet, can actually help you to lose weight, and even live longer! The satiating quality of fatty foods can also help people reduce their cravings, as well as reduce and eliminate their desire for animal foods which helps them stay on a vegan/plant based diet!

EQUIPMENT:

Blender - The only equipment you need for this chocolate smoothie recipes is a blender. If you do not want to consume plastic scrapes and Teflon flakes* from plastic high-speed blender containers, then we recommend using a glass jar blender without plastic on the bottom like the Oster Pro 1200 (Amazon affiliate link).

WHAT, ENSLAVED MONKEYS? - I was using Young Thai coconuts, until I found out that there may be as much as 99% of the Thai coconuts being picked by enslaved and abused monkeys.

COCONUTS - Free from Monkey Slavery & Abuse - Many stores that sell coconuts offer a few different types of coconuts: 1) young Thai (white, with husk), 2) mature - dry (brown, without husk), 3) mature - fresh (white, without husk) and 4) fresh (green, with husk). Coconut Milk - From young Thai coconuts (white, with husk) - White coconuts with a flat round base and a cone shaped top and wrapped in plastic. I consider these to be the best-tasting of the coconuts.
Thai coconut water is sweetest, and the 'meat' is the softest, almost jelly like.
If you use young Thai for making coconut milk, it does not require straining. Just blend the coconut meat with the coconut water (or regular water) and be prepared to drink sweet coconut milk. Not all coconuts have the same amount of meat, so the thickness of milk will depend on the amount of coconut meat and water. 
Not Ethical/Vegan- Unfortunately, in Thailand, it is estimated that 99% of the coconuts are harvested by enslaved monkeys (macaques), so this kind of practice is definitely not considered ethical or Vegan, which is why I am not buying them anymore. This harvesting practice is not just in Thailand - Sri Lanka, Indonesia, Malaysia, India and other countries in the region also use monkeys. 
There are lists of companies on the internet that claim that they do not use monkeys, yet based on my personal experiences, I do not automatically trust any company just on their words, because they could be and often are deceiving/lying. I would guess that some of these companies may have never even seen the coconut farm(s) they buy from and/or have independently investigated where their coconuts come from, since they just buy coconuts wholesale or buy already processed coconut products. So, to be sure I would only buy from countries that I am sure do not use monkeys. According to my research, Mexico does not use monkeys. NOTE: If a coconut product says, "Made in USA" (e.g. coconut oil, butter, shreds...), it does not mean that the coconuts are grown in the USA. Made in USA, usually refers to the processing, and not where it was grown, so can be made from 100% imported product(s). 
Coconut milk - From mature- dry (brown, without husk) coconut - Water is often much less compared to other coconuts and not good for drinking. The meat is good for coconut milk, but it will require straining to make smooth coconut milk.
Coconut milk - From mature fresh (white, without husk) coconut
 - These offer a good quality water and milk product, but are fibery, so it requires straining to make smooth coconut milk.
Coconut milk - From fresh/green coconuts (green, with husk) - They often have their top and bottom trimmed off. The are very sweet and tasty, similar to young Thai coconut. They are often found  in Mexican Markets for about $2-$3 each. They are very good quality for both water and meat, great for smoothies, some can be little too fibery for coconut milk without staining.

Coconut milk - From shredded coconut or coconut flakes - A low-cost option that does not require opening coconut. Usually sold in bulk, but it makes hard to identify where coconut was grown, since bulk items usually not labeled the country of origin.

I am volunturing for local garden and there is plenty of alfalfa growing, I harvested bunch and make smoothie.
I am not big fan of green smoothies, I prefer salads, I love greens in salads  not bleden with fruits,  but fresh alfalfa juice taste so good and with combination with ginger, apples and bananas I can drink 4-6 cups of alfalfa ginger smothie with a pleasure.

On average store bought almond milk has ONLY 4 almonds per cup! Buying packaged almond milk is similar to buying bottled vitamin water or soda, since in both you pay a lot for not getting much nutrients and most of the calories come from processed sugar(s). 

BE A BETTER VEGAN BY REDUCING PLASTIC POLLUTION - Most plant milks are packaged in cartons (74% paper, 22% polyethylene and 4% aluminum) which makes them very difficult to recycle, so they end up in landfills toxify our ground waters. If this toxic plastic enters back into our environment it can end up harming and killing animals. Plus, the lids are unrecyclable and can end up in animals (mostly birds) stomach. Buying almonds in bulk using a reusable or compostable bag reduces plastic pollution.

Nut Milk Bag - To avoid eating synthetic fibers (hmmm eating plastic?) and leaching toxic chemicals into your food, from synthetic (nylon) nut milk bags (often just relabeled paint strainers), I recommend using a 100% organic or natural nut milk bag.
NOTE: On Amazon.com there are many fake Organic nut milk bags and not even fully "natural". When I reached almost 42 I started to notice more wrinkles on my face. Of course, the wrinkles were there even before 42, but I did not look so close in the mirror! :-)
I decided to look for natural ways to slow-down and even sometimes reverse the signs of 'aging'. I came across Tonya Zavasta, who promotes a raw food diet and she looks AMAZING for her age, or really any age, so I purchased her e-book: Guide to an Ageless Face: The Smartest Skin Training. She had all kinds of great suggestions. I especially like Chapter 10: Know Your Cosmetics! She warns her readers how cosmetic companies get away with adding in synthetic ingredients under natural sounding names. In general, her book is useful, except I took issue with one of her suggestions - using synthetic tape on your face.

Why I recommend against using plastic or first aid tape as an anti-wrinkle solution.
The only suggestion that I found in her book that did not seem so 'natural' was applying first aid tape to the face. She said when she first used the tape it caused "redness" and that was a BIG red flag for me, since it meant that her skin reacted. I wondered why would her skin react, so I went searching for the answer. The problems seems to clearly be the isooctyl acrylate which is a synthetic chemical found in almost all medical/first aid tapes and bandages. "the presence of one of the most common acrylates (isooctyl acrylate) used in 3M's adhesive bandages and tapes was discovered by accessing online US patent records" http://www.medscape.com/viewarticle/572962_4

Since medical science has proven that our skin is permeable, what we put on our skin can and often is absorbed and thus will end up in our blood stream, which is why I think it is wise that we consider things we put on our skin similar to something we would eat.

Thinly sliced fresh cucumbers work as a great substitute for tapes with toxic chemicals.

Does cucumber work as an anti-wrinkle remedy?

As a child, I loved cauliflower with bread crumbs, my mother fried bread crumbs in butter. As a vegan, I came up with a much tastier and far more nutritious version when compared to the common cauliflower with bread crumbs recipe.
What is great is that this recipe only requires just a few ingredients, and it tastes so good, that even my usually picky son and cat loves it.
It is also easier and faster to make (no frying). It is so simple that you don't even need to follow any measurements, but I will offer my suggested measurements anyways. I just 'eyeball' the ingredients and it always comes out great tasting!

My son's favorite homemade ice cream recipe is Vegan Strawberry Vanilla Ice cream.
Easy - Super easy to make with a high powered blender. It is so easy that I never have to measure the ingredients, so it is hard to mess up this recipe.
Blender - This recipe was made in the Dynablend blender (Glass & plastic-free container). Note: Different size blenders might require you to adjust quantities to be able to blend thick substances.
Ratio - You do not have to stick with my ratio. If you like it sweeter, add more dates, if you like it creamier add more cashews.
Vanilla - Can be added to taste as much as you like. I have vanilla powder and I shake very generously as I like vanilla.
Lecithin - in this recipe is optional, but if you can find GMO-free Soy Lecithin I think it is beneficial and it creates a more creamy and almost dairy-like taste. Another option is sunflower lecithin, but I only see it sold online.

4 REASONS TO MAKE YOUR OWN CULTURED VEGAN NUT CHEESE, INSTEAD OF BUYING VEGAN CHEESE

Health - Most of the commercial vegan cheeses are made from processed ingredients, like oils, starch, and thickeners. If the vegan cheese is made from whole foods, without oil or minimal oil, then the price is very high. 

Price - Store bought cashew cheese will cost at least 4 times more than home made.

I got hooked for a few months on an oil/starch based cheese and ended up I gaining significant extra weight/fat.

Taste - Many vegan cheese recipes are just nuts blended with vinegar or lemon juice and nutritional yeast. They're great as healthy alternatives to animal milk cheese, but they are lacking the real cheesy flavor. Cultured nut cheeses taste like real cheese, and often even better, if the fermentation went right, it should taste tangy, kind of like a sour cream. I gave my cashew cheese to a non-vegans to try, they are also cheese lovers, they asked for more and greatly praised it. If meat and dairy eaters ask for more of vegan cheese you know it is a success.

Environment -  Commercial vegan cheeses are packaged in plastic, often in unrecyclable packaging, actually, I have never seen a vegan cheese in a recyclable or compostable packaging, while it is possible to package in compostable cellophane or plant-based wax. I do not consider plastic to be vegan, since plastic pollution kills and harms animals by the millions. Would be nice if vegan cheese companies also considered wild & sea animals, not just farmed/captive animals, but until then let's reduce plastic usage as much as possible.

Reusable Organic Cheesecloth - Our reusable cheesecloth is the most eco-friendly you can find. It is made the USA from 100% certified organic cotton grown in the USA The edges are sewn with 100% organic cotton threads and all packaged in certified compostable cellophane. Despite the claim of some nut milk bag sellers "nut milk bag is better than cheesecloth" it is actually much easier to use our reusable muslin cheesecloth for making nut cheese, then use a nut milk bag. TOXIC Sewer sludge, which includes things flushed and poured down the drains from residence, hospitals, industry... is processed and tested for only 1% of the potential TOXINS and when it passes these few tests it is then relabeled "biosolids" (a term made for Propaganda) and then applied to home gardens (when gardeners buy packaged soil amenders with the term COMPOST - which is often biosolids) and farm crop fields (except for Certified Organic). If you do not want to feed people and animals the toxic sludge use Certified Organic and biodegradable cleaning products.

I use organic Dr. Bronner's soap bar (I use unscented, since the scented soaps make my hair look greasy) and as a hair conditioner - organic vinegar (most white vinegars are made from GMO corn)
