**Eco Peaceful - Recipe Wall** http://ecopeaceful.com/recipes/recipe-wall/recipes?layout= Thu, 28 Mar 2024 12:14:28 +0000 en-us Creamy Vegan Chocolate Smoothie - High in Omega 3 Fats http://ecopeaceful.com/recipes/recipe-wall/recipe/36-creamy-vegan-chocolate-smoothie http://ecopeaceful.com/recipes/recipe-wall/recipe/36-creamy-vegan-chocolate-smoothie

TASTE & TEXTURE - This Vegan Chocolate smoothie recipe is our family's favorite, and it is 'spoiled teen' approved! It is not very easy to feed healthy and whole foods to my spoiled teenage son, so I created this recipe since it tastes delicious and has a creamy and fluffy texture. The Flax seeds makes it creamy, and chia seeds and avocado makes it thick, fluffy and light. Lecithin makes in this recipe is optional, but it creates a more creamy and almost dairy-like taste. See more information bellow in the "recipe notes" how to buy a Natural Lecithin without any solvents, such as acetone, ethanol or hexane.

NUTRITION - I created this smoothie purposefully to be very high (almost 1000% RDA for adult female) in Omega-3 fatty acids, since my son usually does not eat food high in Omega-3s. Most Americans are deficient in Omega-3s, even those who chose to eat fish. Humans do not need to imprison, manipulate and murder fish and deplete our oceans to get Omega-3. Walnuts, flax seeds, chia seeds, hemp seeds are all high in Omega-3s, and you can have undamaged Omega-3 fats from nut/seeds, while fish is usually cooked, which is damages Omega-3s (and all other mono- and poly-unsaturated fatty acids). Most of the fish oil supplements sold on the market are actually bad (rancid). So if you prefer to get Omega-3 from a supplement and chose not to harm and kill fish, it is better to buy vegan DHA (made from algae) (Amazon affiliate link) than from fish. This vegan chocolate smoothie also has about 60% Protein, 70% selenium, 40% calcium. I use https://cronometer.com to evaluate nutrition of the food, which uses the data from USDA database.

WHAT? FAT FOR WEIGHT LOSS? - Contrary to a popular, yet unscientific, belief that only low-fat diets help you to lose weight, scientific studies actually show that adding nuts and seeds (high in fat) into your diet, can actually help you to lose weight, and even live longer! The satiating quality of fatty foods can also help people reduce their cravings, as well as reduce and eliminate their desire for animal foods which helps them stay on a vegan/plant based diet!

EQUIPMENT:

Blender - The only equipment you need for this chocolate smoothie recipes is a blender. If you do not want to consume plastic scrapes and Teflon flakes* from plastic high-speed blender containers, then we recommend using a glass jar blender without plastic on the bottom like the Oster Pro 1200 (Amazon affiliate link).
NOTE: According to independent studies, "BPA-free" plastic claims have been shown to be untrustworthy! I recommend the $59 Blender Oster Pro 1200(glass jar blender without plastic on the bottom) to avoid the many toxic chemicals from plastic leaching into your food and avoid supporting the plastic manufacturing industry as much as possible. Click here to watch our videos about "BPA Free" claims & Blenders.

*I call plastic high-speed blenders, "Plastic Scrapes and Teflon Flakes", since the food, spinning at up to 300mph, is scraping the plastic sides, while flakes of Teflon come off of the blade assembly! According to independent studies, the plastic that used in BPA-free blenders are not truly BPA free.

4 Ways to Make Coconut Milk. What Coconut or Coconut Product to Choose for Making Coconut Milk? http://ecopeaceful.com/recipes/recipe-wall/recipe/30-4-ways-to-make-coconut-milk-what-coconut-to-choose-for-making-coconut-milk http://ecopeaceful.com/recipes/recipe-wall/recipe/30-4-ways-to-make-coconut-milk-what-coconut-to-choose-for-making-coconut-milk

WHAT, ENSLAVED MONKEYS? - I was using Young Thai coconuts, until I found out that there may be as much as 99% of the Thai coconuts being picked by enslaved and abused monkeys.

COCONUTS - Free from Monkey Slavery & Abuse - Many stores that sell coconuts offer a few different types of coconuts: 1) young Thai (white, with husk), 2) mature - dry (brown, without husk), 3) mature - fresh (white, without husk) and 4) fresh (green, with husk). For the freshest and lowest cost, I buy coconuts in the Mexican or Asian markets.Best coconut for coconut milk young thai mature coconut 800

Coconut Milk - From young Thai coconuts (white, with husk) - White coconuts with a flat round base and a cone shaped top and wrapped in plastic. I consider these to be the best-tasting of the coconuts.
Thai coconut water is sweetest, and the 'meat' is the softest, almost jelly like.
If you use young Thai for making coconut milk, it does not require straining. Just blend the coconut meat with the coconut water (or regular water) and be prepared to drink sweet coconut milk. Not all coconuts have the same amount of meat, so the thickness of milk will depend on the amount of coconut meat and water.
Not Ethical/Vegan- Unfortunately, in Thailand, it is estimated that 99% of the coconuts are harvested by enslaved monkeys (macaques), so this kind of practice is definitely not considered ethical or Vegan, which is why I am not buying them anymore. This harvesting practice is not just in Thailand - Sri Lanka, Indonesia, Malaysia, India and other countries in the region also use monkeys.
There are lists of companies on the internet that claim that they do not use monkeys, yet based on my personal experiences, I do not automatically trust any company just on their words, because they could be and often are deceiving/lying. I would guess that some of these companies may have never even seen the coconut farm(s) they buy from and/or have independently investigated where their coconuts come from, since they just buy coconuts wholesale or buy already processed coconut products. So, to be sure I would only buy from countries that I am sure do not use monkeys. According to my research, Mexico does not use monkeys. NOTE: If a coconut product says, "Made in USA" (e.g. coconut oil, butter, shreds...), it does not mean that the coconuts are grown in the USA. Made in USA, usually refers to the processing, and not where it was grown, so can be made from 100% imported product(s).
Coconut milk - From mature- dry (brown, without husk) coconut - Water is often much less compared to other coconuts and not good for drinking. The meat is good for coconut milk, but it will require straining to make smooth coconut milk.
Coconut milk - From mature fresh (white, without husk) coconut
- These offer a good quality water and milk product, but are fibery, so it requires straining to make smooth coconut milk.
Coconut milk - From fresh/green coconuts (green, with husk) - They often have their top and bottom trimmed off. The are very sweet and tasty, similar to young Thai coconut. They are often found in Mexican Markets for about $2-$3 each. They are very good quality for both water and meat, great for smoothies, some can be little too fibery for coconut milk without staining.
fresh green coconut with husk 800

Coconut milk - From shredded coconut or coconut flakes - A low-cost option that does not require opening coconut. Usually sold in bulk, but it makes hard to identify where coconut was grown, since bulk items usually not labeled the country of origin.
Coconut milk - From coconut butter - This is the whole coconut, not just oil. Nutiva ]]> cms@joomlaexcellence.com (LenaMumma) Uncooked & Raw Vegan, Kids Friendly, Sweet, Blender, Plant Milk (soy milk, rice milk, nut milk...), Dairy Substitute / Dairy Alternative Thu, 23 Feb 2017 19:20:00 +0000 Almond Hemp Milk - Boost Nutrition with Hemp Seeds http://ecopeaceful.com/recipes/recipe-wall/recipe/26-almond-hemp-milk-boost-nutrition-with-hemp-seeds http://ecopeaceful.com/recipes/recipe-wall/recipe/26-almond-hemp-milk-boost-nutrition-with-hemp-seeds

BOOST NUTRITION WITH HEMP SEEDS - Almonds are very nutritious, and a good source of vitamin E, but they are low in omega 3, while hemp seeds have a perfect ratio of omega 3 to 6. So, by combining them you can make a very nutritious nut milk. Most nuts and seeds are better to combine to get the best nutrients profile. I highly recommend using CRON-O-Meter to keep track of both micro and macro nutrients.

NUTS... FOR WEIGHT LOSS? - Contrary to a popular, yet unscientific, belief that only low-fat diets help you to lose weight, scientific studies show that adding nuts and seeds (high in fat) into your diet can actually help you to lose weight, and even live longer! The satiating element of fatty foods can also entice people to reduce cravings, and reduce and eliminate animal foods, and/or help stay on a vegan/plant based diet!

HOW TO REDUCE THE HEMP SEED TASTE - Hemp seeds do not require soaking, but if you do not like the strong hemp taste, soaking and rinsing can reduce the hempy taste. To completely eliminate the hempy taste you can also roast them, but it is not the healthiest way since it damages the fats (fatty acids).

COST - WOW! STORE BOUGHT ALMOND MILK, COSTS UP TO $70/LB FOR THE ALMONDS!! - Some people think that store-bought milk costs less than homemade nut milk, but store bought almond milk are mostly made of water, non-nutritious fillers/thickeners, and possibly extracted oils/fat(s) and sugar(s). On average store bought almond milk has ONLY 4 almonds per cup! Buying packaged almond milk is similar to buying bottled vitamin water or soda, since in both you pay a lot for not getting much nutrients and most of the calories come from processed sugar(s).

BE A BETTER VEGAN BY REDUCING PLASTIC POLLUTION - Most plant milks are packaged in cartons (74% paper, 22% polyethylene and 4% aluminum) which makes them very difficult to recycle, so they end up in landfills toxify our ground waters. If this toxic plastic enters back into our environment it can end up harming and killing animals. Plus, the lids are unrecyclable and can end up in animals (mostly birds) stomach. Buying almonds in bulk using a reusable or compostable bag reduces plastic pollution.

EQUIPMENT
Blender - Good news! You do not need a high-speed blender (such as Vitamix or Blendtec) for making any nut milk. NOTE: According to independent studies, BPA-free blenders are not truly BPA free. To avoid toxic chemicals from plastic leaching into your food, we recommend using a glass jar blender without plastic on the bottom (Dynablend Clean DB-950 or Oster Pro 1200 both have stainless steel on the bottom). Click here to watch our videos for more details.

Nut Milk Bag - To avoid eating synthetic fibers (hmmm eating plastic?) and leaching toxic chemicals into your food, from synthetic (nylon) nut milk bags (often just relabeled paint strainers), I recommend using a 100% organic or natural nut milk bag.
NOTE: On Amazon.com there are many fake Organic nut milk bags and not even fully "natural". We tested several nut milk bags, and all of them had synthetic threads that is fraying and even glue on the end of the threads despite their claims of "organic cotton threads" and "no glue'! Read our article EXPOSED! Creamy Strawberry Vanilla Vegan Ice Cream http://ecopeaceful.com/recipes/recipe-wall/recipe/19-creamy-strawberry-vanilla-vegan-ice-cream http://ecopeaceful.com/recipes/recipe-wall/recipe/19-creamy-strawberry-vanilla-vegan-ice-cream

My son's favorite homemade ice cream recipe is Vegan Strawberry Vanilla Ice cream.
Easy - Super easy to make with a high powered blender. It is so easy that I never have to measure the ingredients, so it is hard to mess up this recipe.
Blender - This recipe was made in the Dynablend blender (Glass & plastic-free container). Note: Different size blenders might require you to adjust quantities to be able to blend thick substances.
Ratio - You do not have to stick with my ratio. If you like it sweeter, add more dates, if you like it creamier add more cashews.
Vanilla - Can be added to taste as much as you like. I have vanilla powder and I shake very generously as I like vanilla.
Lecithin - in this recipe is optional, but if you can find GMO-free Soy Lecithin I think it is beneficial and it creates a more creamy and almost dairy-like taste. Another option is sunflower lecithin, but I only see it sold online.

Cultured Nut / Cashew Cheese - Vegan Cream Cheese http://ecopeaceful.com/recipes/recipe-wall/recipe/37-cultured-nut-cashew-cheese-vegan-cream-cheese http://ecopeaceful.com/recipes/recipe-wall/recipe/37-cultured-nut-cashew-cheese-vegan-cream-cheese

4 REASONS TO MAKE YOUR OWN CULTURED VEGAN NUT CHEESE, INSTEAD OF BUYING VEGAN CHEESE

Health - Most of the commercial vegan cheeses are made from processed ingredients, like oils, starch, and thickeners. If the vegan cheese is made from whole foods, without oil or minimal oil, then the price is very high.

Price - Store bought cashew cheese will cost at least 4 times more than home made.

Home made organic cashew cheese ~$4.5/lb*
Store bought organic cashew cheese ~$18-20/lb
*Calculated based on organic cashew pieces price $7.99/lb

I got hooked for a few months on an oil/starch based cheese and ended up I gaining significant extra weight/fat.

Taste - Many vegan cheese recipes are just nuts blended with vinegar or lemon juice and nutritional yeast. They're great as healthy alternatives to animal milk cheese, but they are lacking the real cheesy flavor. Cultured nut cheeses taste like real cheese, and often even better, if the fermentation went right, it should taste tangy, kind of like a sour cream. I gave my cashew cheese to a non-vegans to try, they are also cheese lovers, they asked for more and greatly praised it. If meat and dairy eaters ask for more of vegan cheese you know it is a success.

Environment - Commercial vegan cheeses are packaged in plastic, often in unrecyclable packaging, actually, I have never seen a vegan cheese in a recyclable or compostable packaging, while it is possible to package in compostable cellophane or plant-based wax. I do not consider plastic to be vegan, since plastic pollution kills and harms animals by the millions. Would be nice if vegan cheese companies also considered wild & sea animals, not just farmed/captive animals, but until then let's reduce plastic usage as much as possible.

EQUIPMENT
Blender*
- Good news! You do not need a special high-powered, high-speed blender (such as Vitamix or Blendtec) for making any plant-based cheeses.

NOTE: According to independent studies, "BPA-free" plastic claims by plastic manufacturers have been shown to be untrustworthy! I recommend the $60 Oster Pro 1200* (has glass jar without plastic on the bottom) to avoid the many toxic chemicals from plastic from leaching into your food, will also not support the plastic manufacturing industry. Click here to watch our videos about "BPA Free" claims & Blenders.

Reusable Organic Cheesecloth - Our reusable cheesecloth is the most eco-friendly you can find. It is made the USA from 100% certified organic cotton grown in the USA The edges are sewn with 100% organic cotton threads and all packaged in certified compostable cellophane. Despite the claim of some nut milk bag sellers "nut milk bag is better than cheesecloth" it is actually much easier to use our reusable muslin cheesecloth for making nut cheese, then use a nut milk bag. It is easier and cleaner to pour and to remove the cheese from cheesecloth. I tried to use nut milk bag for making cheese and it was messy and hard to remove the cheese.

Melon Seed Milk Recipe - Straight from Melon http://ecopeaceful.com/recipes/recipe-wall/recipe/24-melon-seed-milk-recipe-straight-from-melon http://ecopeaceful.com/recipes/recipe-wall/recipe/24-melon-seed-milk-recipe-straight-from-melon

For a long time I wondered what do you do with melon seeds?

NOT WASTE - Most people usually eat melon and discard melon seeds. And I am totally guilty of that. All my life, I either threw away or composted melon seeds. One day I said to myself, "What a waste of a highly nutritious food!" I tried to eat the seeds them, but it was too much work to get the seeds from their shell, and then I realized that I could just make melon seed milk, in the same way that I was making almond milk.
EASY & SAFE MONEY
- Yes! You can make very easily melon milk out of any melon seeds (Honeydew, Cantaloupe, (ect.), and it saves you money at the same time.
WEIGHT LOSS - Contrary to a popular unscientific belief, that low-fat diets help you to lose weight, scientific studies actually show that including nuts and seeds (high in fat) in your diet can actually help you to lose weight, and even live longer!
NUTRITION - I was unable to find the nutrition data of melon seeds, but squash and melon are in the same family, so I am guessing they will be similar in nutrients. According to http://nutritiondata.self.com squash seeds, are "a good source of Protein, Vitamin K, Iron and Copper, and a very good source of Magnesium, Phosphorus and Manganese."
EQUIPMENT

Blender - You do not need a high-speed blender (such as Vitamix or Blendtec) for making any kind of nut milk. We recommend using a glass jar blender (Dynablend Clean DB-950 or Oster Pro 1200) to avoid toxic chemicals from plastic leaching into your food. Click here to watch our videos for more details
Nut Milk Bag - To avoid eating synthetic fibers and leaching toxic chemicals from nylon nut milk bag (often just relabeled paint strainers) into your food, I recommend using a 100% organic or natural nut milk bag.
NOTE: On Amazon.com and Ebay.com there are many fake nut milk bags that claim to be "organic" but are in fact not organic, and not even fully natural. Click here to read our article EXPOSED! Fake Organic Hemp Nut milk Bags sold on Amazon.
Strainer - If you do not have a nut milk bag, a stainless steel fine mesh strainer will also work well if you are only working with a small amount of seeds (1 cup or less).

USES - Melon seed milk can be used in any dairy-free recipes to substitute for dairy milk, in carob smoothies, green smoothies, tropical mixed fruit smoothie and on your cereals and muesli.

Muesli with Nut Milk & Berries http://ecopeaceful.com/recipes/recipe-wall/recipe/4-muesli-with-nut-milk-and-black-berries http://ecopeaceful.com/recipes/recipe-wall/recipe/4-muesli-with-nut-milk-and-black-berries

Vegan and /or Raw Muesli is a popular meal (usually breakfast) based of rolled oats or other rolled grains (which is usually not raw), fresh or dried fruits, nuts, seeds and mixed with any plant milk (nut milk, soy milk, rice milk) coconut yogurt or/and fruit juice.

How to Make it 100% Raw
Rolled oats are not raw product, unless it is labeled as raw. Whole Foods sells raw rolled oats in a plastic bag packaging, I do not consider single-use and disposable plastic as vegan-friendly or eco-friendly, so it is not an EcoPeaceful option, especially when rolled oats available in bulk.
Whole oat is raw and can be purchased in bulk section of Whole Foods - Use presoaked (overnight) whole oats, whole oats also can be sprouted.
Raw nut milk - Make homemade nut/seed milk from unpasteurized nuts or seeds and dates as a sweetener.

Muesli Image with Mulberries
The image shows a Pakistan mulberries (large ruby red-purple) and White mulberries from my trees. I am very disappointed with the taste of fresh white mulberries, they are not sweet at all. Some people describe them as "mild", but I would say that they are tasteless even as some of store bought vegetables. The most flavorful mulberries seem to be the Pakistan mulberries. I think, they are one of the tastiest of all berries and I am growing them in all places the desert of Las Vegas! I am so happy to have huge sweet fresh Pakistan mulberries from a tree - and I soooo happy to skip all that plastic packaging from store bought berries, which as you know often harms and kills animals/wildlife.

Kids-friendly
My son loves this recipe with raspberries, we also planted them in Las Vegas, but we are not sure if we will succeed in producing raspberries. Choose your berries based on availability and/or taste preference, they are all super healthy and super nutritious. I am so happy that my picky son loves this recipe, since it takes very little time to make it and now he can even make it himself.

Raw Vegan Cheesy Onion Bread / Crackers with Leftover Nut Milk Pulp http://ecopeaceful.com/recipes/recipe-wall/recipe/31-cheesy-onion-bread-crackers-with-almond-pulp http://ecopeaceful.com/recipes/recipe-wall/recipe/31-cheesy-onion-bread-crackers-with-almond-pulp

Any nut milk pulp? Raw Vegan Cheesy Onion bread/crackers have a unique taste and can be done with almost any nut/seed milk pulp, such as almond, walnut, cashew, hemp or similar nut or seed milk pulp.

Any type of onion? Unlike fresh onions, dehydrated onions are both mild and delicious, and even children love them! You can use white, yellow or red onions.

Grounded vs soaked flax seeds? You can use grounded or whole flax seeds. Both will work. Using grounded flax seeds - the bread becomes softer, and also they dehydrate faster. Using whole soaked flax seeds, crackers become more crunchy. You can grind the flax seeds in a regular glass blender, grinding flax seeds in the plastic blender will scratch the blender sides and bottom and plastic scrapes are not part of our recipe :-)

With or without oil? Oil is optional, it makes bread/crackers softer, if you do not want to use any oil, crackers, will still be very good, just a little harder.

Nutritional yeast, lemon/vinegar, soy sauce/miso? These are all optional ingredients that give your crackers a cheesy flavor. Your onion cracker will still taste amazing even without some or all of these ingredients. Nutritional yeast, with coconut oil, will give your crackers/bread the most cheesy flavor.

EQUIPMENT

Blender - Good news! You do not need an high-priced, high-powered, high-speed blender (such as Vitamix or Blendtec) to grind you flax seeds. NOTE: BPA-free blenders are not truly BPA free - according to independent studies. We recommend using a stainless steel or glass jar blender without plastic on the bottom (Oster Pro 1200 - Amazon Affiliate link) to avoid toxic chemicals from plastic leaching into your food. Dehydrator or oven? This recipe can probably be made in the convection oven on the low heat, I use this stainless steel dehydrator (Amazon Affiliate link) that works great for raw crackers and various other raw food recipes.

EASY - A few years ago we ordered the raw vegan Kookies & Kream Smoothie at the Go Raw Cafe, in Las Vegas, Nevada, and we fall in love with the taste and texture. I thought that based on the ingredients it would be easy for me to make at home. So, I played with different combinations of ingredients, and I have also simplified it to avoid having to "milk" almond milk or coconut milk while maintaining it's heavenly taste for both children and adults.

SANS-ENSLAVED MONKEYS - I was using young Thai coconuts for this recipe... until I found out that there may be as much as 99% of the Thai coconuts being picked by enslaved and abused monkeys. See below for more information on my recommendation for alternative coconuts.
NUTRITION - Coconuts have healthy (undamaged) fats, this smoothie has very little omega 3 fatty acid, so make sure that you also include omega 3 fatty acids into your diet. I highly recommend using CRON-O-Meter to keep track of macro and micro nutrients.

EQUIPMENT

Blender - Good news! You do not need a high-powered, high-speed blender (such as Vitamix or Blendtec) for making this smoothie. If you are unable to access fresh young coconuts, you will need blend and strain the pulp from mature coconuts, using a nut milk bag or strainer since the mature coconuts are very fibery.
